Easy Cauliflower Rice

This Easy Cauliflower Rice is the perfect side dish, no matter whether you're serving chicken, beef, or fish for dinner. It's got a light buttery-garlic flavor that pairs well with just about anything. And since it's cooked in under 15 minutes you know it's going to be easy!
What You'll Need
- 1 head cauliflower, cut into florets
- water
- 2 tablespoons margarine
- 6 cloves garlic, minced
- 1 1/2 cup cooked brown rice
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons grated Parmesan cheese
What to Do
- In a large soup pot over medium-high heat, add cauliflower and enough water to cover cauliflower. Bring to a boil and cook for 10 minutes, or until fork tender; drain.
- Place cauliflower in a food processor or blender and process until smooth.
- In the soup pot over medium-low heat, melt margarine and saute garlic 2 to 3 minutes. Add the rice, cauliflower mixture, salt, and pepper; mix well. Sprinkle with Parmesan cheese and serve.
