Our Rustic Herb Stuffing features the flavors of thyme, sage, onion, and more, with the added bonus of fresh, chopped apples. You don't have to stray from your diabetic meal plan with this lightened-up and homemade stuffing recipe!

What You'll Need

  • 2 tablespoons light margarine
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1/2 cup chopped apple
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup fat-free, low sodium chicken broth
  • 10 slices whole wheat, light bread, cut into 1/2-inch cubes
  • 1/4 cup egg substitute

What to Do

  1. Preheat oven to 350 degrees F. Coat a 1-quart casserole dish with cooking spray.
  2. In a large skillet over medium heat, melt margarine. Add onion, celery, apple, thyme, sage, salt, and pepper; saute 5 to 7 minutes, or until tender. Add chicken broth and heat just until warm.
  3. In a large bowl, combine bread cubes, vegetable mixture, and egg substitute; toss until evenly coated. Place in casserole dish and cover.
  4. Bake 25 minutes, remove cover, and continue baking 15 to 20 minutes, or until golden and heated through.

I am not usually a fan of stuffing, but tried this one in preparation for a Thanksgiving dinner I'm hosting. It's a winner! The apples give it a nice touch of sweetness without overdoing it. I know my guests are going to love it.
