Apple Tree Cabbage Slaw
- SERVES
- 6
The healthy benefits of tree-ripe apples and crunchy walnuts add lots of spark to our Apple Tree Cabbage Slaw. This slaw is one of our favorite takes on a lighter version of a Waldorf-style salad.
What You'll Need
- 1 Granny Smith apple, cored, coarsely chopped
- 4 cups thinly sliced red cabbage
- 2 tablespoons chopped walnuts, toasted
- 4 tablespoons Sunny Citrus Vinaigrette (see Note)
What to Do
- In a large bowl, toss apple, red cabbage, and walnuts. Drizzle with vinaigrette and toss again.
Notes
To make your own Sunny Citrus Vinaigrette, in a small bowl, whisk together 3 tablespoons fresh orange juice, 1 tablespoon fresh lemon juice, 2 tablespoons canola or olive oil, and 2 teaspoons Splenda granulated sweetener. Makes about 1/3 cup.
