What You'll Need
- 1 whole wheat English muffin, halved
- 1/4 cup reduced-fat small curd cottage cheese, well drained
- 1/2 cup unsweetened applesauce
- 1/2 teaspoon ground cinnamon
- 2 teaspoons granulated Splenda
What to Do
- Lightly toast muffin halves. Preheat oven to broil.
- In a small bowl, combine cottage cheese and applesauce. Top each muffin half with mixture, distributing evenly.
- In a small bowl, combine cinnamon and Splenda. Sprinkle over muffins.
- Broil muffins 2 to 3 minutes, or until cheese and applesauce mixture is heated through. Serve immediately.
