Chicken stuffed with pizza?! You bet! Our Pizza-Stuffed Chicken recipe features all the best that pizza has to offer, like just the right amount of cheese, marinara sauce, and pepperoni. And guess what? It's low-carb! Your family won't be able to tell, but this delicious dinner is actually fit for a diabetic diet!
What You'll Need
- 2 (8-ounce) boneless, skinless chicken breasts
- 2 tablespoons grated Parmesan cheese, divided
- 1/2 teaspoon dried oregano
- 12 slices turkey pepperoni
- 1/2 cup reduced-fat shredded mozzarella cheese, divided
- 3 tablespoons whole-wheat bread crumbs
- Cooking spray
- 1/4 cup low-sodium marinara sauce
What to Do
- Preheat oven to 425 degrees F. Coat a baking sheet with cooking spray.
- Cut each chicken breast in half horizontally to create 2 cutlets. Cover with wax paper and lightly pound to 1/4-inch thickness. Sprinkle chicken cutlets evenly with 1 tablespoon Parmesan cheese and the oregano. Top each piece with 3 slices pepperoni and 1 tablespoon mozzarella cheese, then roll up jelly-roll style.
- In a shallow dish, combine bread crumbs and remaining 1 tablespoon Parmesan cheese; mix well. Place chicken roll-ups in bread crumb mixture, coating evenly on all sides. Place seam-side down on baking sheet. Lightly spray with cooking spray.
- Bake 15 minutes. Remove from oven and top each chicken roll-up with 1 tablespoon marinara sauce and remaining mozzarella cheese. Bake 5 to 7 more minutes or until chicken is no longer pink in center. Serve immediately.
