What You'll Need

  • 6 slices (1-oz. each) deli ham
  • 1/2 cup (2-ounce) shredded Swiss cheese
  • 6 (4-ounce) boneless, skinless chicken breast halves
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Italian bread crumbs
  • 1/8 teaspoon paprika

What to Do

  1. Preheat the oven to 350 degrees. Coat a 6-cup muffin tin with nonstick cooking spray.
     
  2. Between 2 pieces of wax paper, gently pound the chicken with a mallet or rolling pin to 1/4-inch thickness. Season the chicken breasts with salt and pepper, then place a slice of ham on top of chicken breast. Evenly sprinkle with cheese and roll up tightly, tucking in the sides as you roll.
     
  3. Place the rolls seam side down in the cups of the muffin tin. Sprinkle with bread crumbs and paprika.
     
  4. Bake for 25 to 30 minutes, or until no pink remains in the chicken and its juices run clear. Serve immediately.

I have not had this dish in years, so I am very happy to find one on this site. I love the idea of using the muffin pan. I agree with britathrt 2083188 that Dijon mustard on the chicken to give it a nice bit of tartness to pair with the creaminess of the cheese.

Did this tonight..though my husband ate the ham for lunch so we used some chopped veggies instead of the ham. Wonderful!

makes it so much neater....don't have to beware of blowouts!! Cleanup was a breeze. I spread a tiny bit of Dijon mustard on the chicken before adding the ham/cheese.

Looks great and simple.

It helps the chicken stay rolled together while baking in the oven without the use of toothpicks!

I don't get the use of the muffin tin!
