Tarragon Pot Roast

The consummate comfort food has to be a fork tender pot roast. Our Tarragon Pot Roast turns homey into restaurant-fancy, and, of course, keeps your diabetes diet in mind.
What You'll Need
- 1 three-pound very lean beef bottom round roast
- 1 medium onion, chopped
- 2 carrots, sliced
- 1/2 cup dry red wine
- 1/2 cup water
- 1 tablespoon minced garlic
- 1 tablespoon dried tarragon
- 1/2 teaspoon black pepper
What to Do
- Preheat the oven to 325 degree F. Coat a roasting pan with nonstick cooking spray and place the roast in the pan.
- In a medium bowl, combine the remaining ingredients and pour over the roast. Bake for 1-1/2 to 2 hours, or until the meat is fork-tender.
- Slice, and serve topped with the sauce from the pan.
