Tomato Florentine Soup

Some nights, a quick bowl of warm and soothing soup is all that can satisfy our tummies (and our schedules). Our homestyle favorite Tomato Florentine Soup is an easy way to keep healthy green veggies, like spinach, in your meal plan.
What You'll Need
- 1 teaspoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 large tomatoes, diced (about 2 pounds)
- 2 teaspoons Italian seasoning
- 2 (14-ounce) cans reduced-sodium chicken broth
- 1 (10-ounce) package fresh spinach, trimmed
- 1/2 teaspoon black pepper
- 2 tablespoons grated Parmesan cheese (optional)
What to Do
- In a soup pot, heat the oil over medium heat. Add the onion and garlic, and sauté for 5 minutes, or until the onion is browned, stirring occasionally.
- Add the tomatoes and Italian seasoning, and cook for 10 minutes, or until the tomatoes soften, stirring occasionally.
- Add the chicken broth, spinach, and pepper; bring to a boil. Reduce the heat to low, cover, and simmer for 2 to 3 minutes, or until the spinach is wilted.
- Ladle soup into bowls, sprinkle with Parmesan cheese, if desired, and serve.
