Hearty Lentil Soup

Low in fat and high in nutrition, lentils are always a super choice for anyone who has diabetes. Our Hearty Lentil Soup is so filling, you can enjoy it as a main dish soup or certainly have a cup as a starter for the rest of your meal.
What You'll Need
- 1 cup finely chopped onion
- 1 cup chopped red or green bell pepper
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 cup dried brown lentils, rinsed, drained
- 1 teaspoon dried oregano
- 3 cups water
- 3 cups low sodium beef broth
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
What to Do

Coat a large soup pot with cooking spray. Over medium heat, cook onion, bell pepper, celery, and carrots until tender, about 6 to 8 minutes, stirring occasionally.

Add the remaining ingredients, mix well, and bring to a boil over high heat. Reduce heat to low, cover, and simmer 50 to 60 minutes, or until lentils are tender, stirring occasionally.

I wish you would show the nutritional values. It's very difficult to plan meals when I don't know how much saturated fat, cholesterol, sodium, carbs, and fiber, especially.

This soup was lacking. Lentil soup is traditionally thick and rich. Mushrooms would be a good addition to this. And something to thicken it up a bit. It's also rather bland despite the spices and existing vegetables. It was okay, but this was not a winner for my father and me.

Very good. Husband loved it. He thought it was similar to split pea. Today we're having leftovers. Gonna try a new product called turkey ham to go with it.

8 servings is a lot of soup... I would suggest making half the quantity if the soup is only for one or two people, or freezing some of the soup for later use, which is what I intend to do.

Good soup if you like lentils. I did exact recipe but fewer carrots & bit more celery & green pepper.
