Effortless Egg Drop Soup

Next time everybody's in the mood for Chinese take-out, surprise 'em with this homemade version of Effortless Egg Drop Soup instead. Our version is made with lighter ingredients, but we don't sacrifice any of that restaurant-style taste! It's so good, everyone will think you ordered in!
What You'll Need
- 4 cups reduced-sodium chicken broth
- 2 tablespoons cornstarch
- 1 tablespoon light soy sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground ginger
- 1 egg, lightly beaten
- 2 scallions, thinly sliced
What to Do
- In a small bowl combine 1/2 cup chicken broth and the cornstarch; mix well and set aside.
- In a soup pot, combine the remaining chicken broth, soy sauce, garlic, and ginger; bring to a boil over high heat.
- Reduce the heat to low; stir in the cornstarch mixture until the soup is thickened.
- Slowly stir in the beaten eggs to form egg strands, and add scallions. Ladle into soup bowls, and serve.
