Our homemade vegetable soup comes packing a Southern favorite - okra! That's what gives our light and healthy Down-Home Veggie Soup a tasty change-of-pace flavor.
What You'll Need
- 1 (12-ounce) package frozen chopped onion, celery, bell pepper, parsley blend
- 3 cups reduced-sodium, fat-free chicken broth
- 1 (14-1/2-ounce) can diced tomatoes with basil, garlic, and oregano
- 1 (12-ounce) package frozen cut okra
What to Do
- Coat a large skillet with cooking spray. Over medium-high heat, cook onion mixture until tender, stirring occasionally.
- Add broth and tomatoes and bring to a boil. Add okra, reduce heat to medium, and simmer, uncovered, 15 to 20 minutes, or until okra is tender.

This sounds delicious. I think I would have to use fresh onion, celery, bell pepper and parsley. My store does not sell a bag of these in the freezer section. I love okra and grow it in my garden, so I always have okra on hand. I will definitely try this soon.

Great broth and the okra was a nice change. It seems you could add a few elbow macaronia and some assorted beans to make minestrone.
