Light Cheddar Cheese Sauce

No need to cross a rich-tasting cheesy sauce off your list just 'cause you have diabetes. Our Light Cheddar Cheese Sauce is made with fat-free milk, so it's fine for using in your favorite dishes.
What You'll Need
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/4 cup fat-free milk
- 1/4 cup reduced-fat shredded Cheddar cheese
What to Do
- In a medium saucepan over medium heat, melt butter. Add flour and cook about 2 minutes, stirring to combine. Do not brown.
- Add milk and heat until it boils, stirring constantly. Reduce heat to low and cook 2 to 3 minutes, or until sauce thickens. Add cheese and stir until it melts. Serve immediately.
