Here's a great dessert idea for your next summer potluck! Our Mixed Berry Graham Pudding is a creamy, no-bake dessert that's made with just 6 ingredients. You'll love it because it's super easy to throw together and they'll love it because it's so sweet and refreshing - you'll love it for that too! 

What You'll Need

  • 9 cinnamon graham cracker sheets
  • 1 3/4 cup cold fat-free milk
  • 1 (1-ounce) package sugar-free instant vanilla pudding mix
  • 1 cup fresh raspberries, divided
  • 1 cup fresh blueberries, divided
  • 2 1/2 cups fat-free frozen whipped topping, divided

What to Do

  1. Line the bottom of a 9-inch square baking dish with 4-1/2 graham crackers; set aside.
  2. In a medium bowl, whisk milk and pudding mix until slightly thickened. Let stand 2 minutes, or until soft set. Stir in 3/4 cup each of raspberries and blueberries. Fold in 2 cups whipped topping.
  3. Spread half the pudding over graham crackers; repeat layers. Cover and refrigerate 2 hours.
  4. Just before serving, dollop with remaining whipped topping and remaining berries.

Notes

Garnish with kiwi just before serving for that added pop of color and sweetness.

How can this be no fat, no calories, nothing? Sounds to good to be true.

Wondering if I could multiply this by 1 1/2 to make in a 9x13 pan? I think doubling the recipe would be too much. Any suggestions??

Made this yesterday, it was amazing! Exactly what we need here in Texas on these hot summer days. I made it with chopped Strawberries instead of raspberries that was my only change from this wonderful recipe. So easy, so quick, soooo delicious! Thank you Mr. Food and Staff

I think this looks like a lovely, summery treat but I have a couple of questions...if you dont have access to graham crackers, can you suggest something with similar calerie and sugar ingredients to use as substitute? Would digestive biscuits work similarly? And will fresh whipped cream work as well as the frozen? And would that affect the calorie count?

Hi there! Unfortunately the Test Kitchen is unsure of an equivalent substitute for the graham crackers in this recipe. You can replace the frozen whipped topping with freshly whipped cream, however this would most likely make the dessert no longer diabetic-friendly.
