Little kiwifruit sure pack a powerful punch when it comes to tasty excitement. Wait to you see the colorful and tempting swirls of cream and fruit in every portion of this healthy diabetes dessert.
What You'll Need
- 3 large kiwifruit, peeled
- 2 tablespoons granulated Splenda
- 1 cup reduced-fat whipped topping, thawed
- 1/2 teaspoon vanilla extract
What to Do
- Cut 1 kiwi crosswise in half and set aside 1 half for garnish. Cut remaining kiwi into chunks.
- In a blender or food processor on medium speed, blend kiwi and sugar substitute until smooth.
- In a bowl, combine blended kiwi, whipped topping, and vanilla.
- Spoon mixture into 4 parfait or stemmed glasses. Cut reserved kiwi half into 4 slices and garnish each serving with a slice.
