Tomato Scramble

Take advantage of lycopene-rich ruby red tomatoes and protein-packed eggs, and whip up this easy Tomato Scramble for breakfast or brunch. What a delicious way to eat healthy!
What You'll Need
- 1 tablespoon butter
- 1 cup finely chopped onion
- 1 clove garlic, minced
- 3 roma or pear tomatoes, seeded, diced
- 1 1/2 cup liquid egg substitute
What to Do
- In a medium nonstick skillet over medium heat, melt butter. Add onion and garlic, cooking until onion is tender, stirring occasionally. Add tomatoes.
- Cover and simmer about 10 minutes. Add eggs to skillet and cook until eggs are set but not overdone.
