Our easy Crustless Quiche is the perfect brunch recipe to serve at your next brunch get-together. It's so flavorful and rich, you'd never guess it was a healthier low carb recipe!
What You'll Need
- 3/4 cup cooked chopped ham
- 1/2 onion, chopped
- 4 large eggs
- 1/2 cup half-and-half
- 1/8 teaspoon black pepper
- 3/4 cup reduced fat shredded pepper jack cheese
What to Do
- Preheat oven to 350 degrees F. Coat a 9-inch pie plate with cooking spray.
- Evenly distribute ham and onion on bottom of prepared pie plate.
- In a medium bowl, whisk together eggs, half-and-half, and pepper. Stir in cheese. Pour mixture over ham and onion.
- Bake 30 to 35 minutes, or until a toothpick inserted in center comes out clean. Let cool 10 minutes, then serve.

This is a fabulous recipe!!! I added turkey sausage crumbles also and used cheddar cheese instead of pepper jack and it was fabulous!!!! Love, Love, Love it and plan to make it again and again!
