Cheesy Egg Casserole

This is a diabetic recipe? You bet it is! Who says you can't have a hearty Cheesy Egg Casserole if you're trying to eat healthy! Of course you can, and this easy breakfast recipe is proof of that!
What You'll Need
- 2 slices reduced-fat wheat bread, cubed
- 1/2 cup liquid egg substitute
- 1/2 cup fat-free evaporated milk
- 1/2 cup reduced-fat finely shredded sharp Cheddar cheese, divided
- 4 drops hot red pepper sauce
- 1/2 teaspoon onion powder
- 2 scallions, thinly sliced
What to Do

Preheat oven to 325 degrees F. Coat a 1-1/2-quart casserole dish with cooking spray. Arrange bread cubes in baking dish.

In a medium bowl, combine egg substitute, evaporated milk, 1/4 cup cheese, hot pepper sauce, onion powder, and scallions.

Pour egg mixture over bread cubes, pushing cubes down into liquid. Let stand 5 to 10 minutes and push cubes into liquid again, making sure the bread is well coated. Sprinkle with remaining cheese.

Cover and bake 15 minutes. Remove cover and bake 10 additional minutes, or until golden brown and knife inserted in center comes out clean. Serve immediately.

Thought it was great, although I did add a little sausage. Also don't think it made enough for 4 people. Barely fed my husband and I. Next time I'll just double it.

Do a pre baked crust in bottom of dish of hash browns.mixed w chopped onion green pepper garlic half stick melted butter half cup reduced fat cheered cheese. I would add chopped spinach and mushrooms to recipe dash red hot.

easy, fast and ooh it was sooo good!! The 2nd time I made it I added some leftover chopped spinach...yummies!

can shredded potatoes go in this in place of bead cubes

The bread cubes in this recipe work to absorb the liquid, so that this casserole bakes up like a souffle. If you'd like to try it with potatoes, you would have to reduce the amount of liquid used and add in some flour in order to bind the potatoes. We have not tried it this way, and would not recommend doing it in this particular recipe.

I am not much on the egg substitute. Even though I need the diabetic recipe, how many or what amount of eggs would I use in place of the egg sub? Thanks for your help. It sound great.

In place of the 1/2 cup of liquid egg substitute you can use 2 eggs.
