Veggie Chili

This meatless chili is so delicious, that whether you're a vegetarian or on a diabetes diet, you'll still feel satisfied when you cook up a pot of this hearty Veggie Chili. Another bonus is how quickly you can prepare this main dish meal.
What You'll Need
- 1 tablespoon canola oil
- 1 zucchini, cut in 1/2-inch chunks
- 1 summer squash, cut in 1/2-inch chunks
- 1 red bell pepper, cut in 1/2-inch chunks
- 1 onion, slivered
- 2 cans red kidney beans, rinsed and drained
- 1 (14-ounce) can no-salt-added stewed tomatoes
- 3/4 cup salsa
- 2 teaspoons chili powder
- 1 teaspoon cumin
What to Do
1. In a large soup pot, heat oil over medium high heat. Add zucchini, squash, red bell pepper, and onion, and cook 5 minutes, stirring occasionally. Add the remaining ingredients and cook 25 to 30 minutes, or until vegetables are tender, stirring occasionally.
