What You'll Need
- 4 (4-ounce) boneless skinless chicken breast halves, rinsed and patted dry
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 can (14.5-ounce) diced tomatoes with basil, garlic, and oregano
- 1/2 cup drained, sliced black olives
- 1 tablespoon finely grated lemon peel
- 2 cloves garlic, chopped
What to Do

Coat a medium nonstick skillet with cooking spray. Heat to medium-high heat.

Sprinkle chicken with salt and pepper. Place in skillet, cover, and cook 5 to 7 minutes on each side, or until no longer pink. Remove chicken from skillet. Reduce heat to medium.

Add tomatoes, olives, lemon peel, and garlic to skillet. Cook about 4 minutes, or until hot, stirring occasionally. Return chicken to skillet and heat through.
Notes
- TIP: When using lemon peel, be sure not to include any of the white pith; it's very bitter.

I either review and/or print diabetic recipes. I have noticed most of the servings are around 8 or 10. Since I live alone, I don't need to make anything that serves more then one, maybe 2 or 3. Can you develop recipes for me?

Although I personally do not like the black olives, three out of the five of us do. I think this would be something that we could all agree on to have for dinner. My husband is not a chicken lover, but he will eat it from time to time. I think this might be one of the dishes he will end up wanting the most often when I make chicken.

It's hard to believe that this is for diabetics it's so good!! Easy to make and wonderful to eat!!
