What You'll Need
- 1 (16-ounce) container, refrigerated fresh salsa
- 1 (15-ounce) can low-sodium black beans, rinsed and drained
- 1 pound boneless, skinless chicken thighs
- 1/3 cup reduced-fat grated Cheddar cheese
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
What to Do
- In a 4-quart or larger slow cooker, place salsa, black beans, and chicken.
- Cover and cook on high 3-1/2 hours, or until fork-tender.
- Remove chicken to a cutting board and shred with two forks. Return chicken to slow cooker. Add cheese, cumin, chili powder, salt, and pepper; mix well. Cook 15 additional minutes, or until cheese is melted. Serve immediately.
Notes
To make your Slow Cooker Pulled Chicken a little fancier, just garnish with cilantro and avocado slices. (Okay, this'll make it tastier, too!)
