Light Chicken Cacciatore

Chicken Cacciatore is a popular Italian dish that everyone enjoys. Even though you typically order it in restaurants, it's just as easy to make at home. Here's a lighter but just as flavorful version to try.
What You'll Need
- 1 tablespoon olive oil
- 1 large onion, cut in half, then into 1/4-inch slices
- 1 (8-ounce) package sliced mushrooms
- 2 bell peppers (1 red, 1 green), thinly sliced
- 2 to 3 garlic cloves, minced
- 1 chicken (3 pounds), cut into 8 pieces and skin removed
- 1 (26-ounce) jar light spaghetti sauce
- 1/2 teaspoon Italian seasoning
- 1/2 cup water
What to Do
- In a large pot, heat olive oil over medium-high heat. Saute onion, mushrooms, bell peppers, and garlic 3 to 4 minutes, or just until tender. Remove vegetables to a medium bowl, leaving any remaining liquid in the pot.
- In the same pot, saute chicken pieces 4 to 5 minutes per side, or until golden. Return sauteed vegetables to the pot. Add spaghetti sauce, Italian seasoning, and water; mix well. Reduce heat to medium-low, cover, and cook 35 to 40 minutes, or until chicken is tender and cooked through.
