Florentine Chicken Rollups

We've lightened up these delicious Florentine Chicken Rollups, keeping all the flavor, so that they can be enjoyed as a tasty diabetes recipe choice for a weeknight dinner or when company calls.
What You'll Need
- 4 (4-ounce) skinless, boneless chicken breast halves
- 1/2 cup finely chopped mushrooms
- 1/2 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
- 4 tablespoons reduced-fat cream cheese
What to Do

Lightly pound chicken between 2 large sheets of wax paper with rolling pin to flatten.

Coat a medium nonstick skillet with cooking spray. Over medium heat, cook mushrooms 2 to 3 minutes, stirring occasionally.

In a small bowl, combine mushrooms, spinach, and cream cheese. Spoon 2 to 3 tablespoons of mixture over each chicken breast half. Roll and secure with toothpicks and spray both sides with cooking spray.
- Return skillet to medium-high heat and add chicken rolls. Reduce heat to medium and cook rolls 10 to 12 minutes, or until chicken is browned and no longer pink, turning rolls occasionally. Add additional spray to skillet as needed.
