What You'll Need
- 1 egg
- 1/3 cup stick margarine
- 1/3 cup Splenda
- 1/4 cup Splenda brown sugar blend
- 1 1/4 cup whole wheat flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1/3 cup reduced-sugar and calorie orange juice
- 2 teaspoons orange extract
- 2 tablespoons nuts, chopped
What to Do
- Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
- In a large bowl with an electric mixer, combine egg, margarine, granulated Splenda, and Splenda brown sugar. Beat 2 minutes at high speed, scraping down the bowl occasionally. Add in flour and mix well. Add in remaining ingredients, except nuts and mix 1 minute on low speed. Pour into prepared baking dish. Sprinkle with nuts.
- Bake 20 to 25 minutes or until a toothpick inserted into center comes out clean.

I think it's great. Daughter thought it was a spice cake....which it does. The only thing different I did was use Sunny Delight because thats all I had
