We ditched the flour to bring you this Flourless Applesauce Cake recipe that's a healthier choice for anyone following a diabetic diet. Not only is this cake better for you nutrition-wise, but the applesauce makes it super moist and the spices make it extra-flavorful. It's a winner all around!
What You'll Need
- 1 1/2 cup quick-cooking oats
- 1/2 cup light brown sugar
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup unsweetened applesauce
- 1/4 cup canola oil
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 cup chopped walnuts
- confectioners' sugar (optional)
What to Do
- Preheat oven to 350 degrees F. Line an 8- x 8-inch baking pan with parchment or wax paper.
- Place the oats in a blender or food processor and blend until they resemble flour; place in a medium bowl. Add brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt; mix well.
- In a small bowl, stir together applesauce, oil, egg, and vanilla; add to dry ingredients and mix until thoroughly combined. Stir in walnuts and pour into baking dish.
- Bake for 25 to 30 minutes, or until toothpick inserted in center comes out dry. Let cool, then sprinkle with confectioners' sugar if desired.

I used Swerve brown sugar instead (further reducing sugar content) and it was DEVINE!!! It's my new "Go To" Dessert recipe -)

Looking to reduce sugar, can I replace sugar with over ripe bananas? If so, how much would I use?

Hi! Test Kitchen has not tried replacing bananas for sugar, but believes it will work in recipe. We suggest using 2 large or 3 small over ripe bananas.

rate this cake a 5. I made this cake tonight and it was very good. I did not have light brown sugar so I used dark brown sugar. My family who are not diabetic liked it to. I am newly diagnosed so I am trying to find recipes for my husband so he does not feel deprived of the foods he loves.

I followed the recipe for the most part. Only replaced the brown sugar with coconut sugar. They were super moist and very delicious! Everyone who tried them loved them.
