The taste of warm cinnamon and apples really shines through in our recipe for Amazin' Apple Cake. It's the kind of cake that's best enjoyed with a bunch of friends on a chilly fall day, so invite the whole gang over!
What You'll Need
- 2 eggs
- 1/3 cup plus 1 tablespoon brown sugar
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup reduced-fat milk
- 2 medium apples, peeled, cored, and thinly sliced
What to Do
- Preheat oven to 350 degrees F. Coat a 9-inch cake pan with cooking spray.
- In a large bowl, with an electric mixer, beat eggs and 1/3 cup brown sugar until creamy. Add flour, baking powder, salt, cinnamon, and milk; mix well. Gently stir in half the apples until evenly coated. Pour batter into cake pan. Arrange remaining apple slices over batter in a circle. Sprinkle with remaining brown sugar.
- Bake 30 to 35 minutes, or until toothpick inserted in center comes out clean. Serve warm.

This is a very good cake but a little dry. Perhaps it was in the oven too long? Does it need to be refrigerated?

We're sorry to hear that it came out a little dry. One reason could that your oven may be a little hotter than ours so it cooked it a bit quicker. Hopefully it will be better next time. And nope, this doesn't need to be refrigerated. Enjoy!
