Not only is this the Easiest Pineapple Cake ever, but it's also one of the tastiest! This low-carb, moist pineapple cake is made with convenient shortcut ingredients and whips up in no time. It's perfect for a potluck 'cause it can be made hours ahead!
What You'll Need
- 1 (16-ounce) package sugar-free yellow cake mix, batter prepared according to package directions (see Note)
- 1 (8-ounce) container sugar-free frozen whipped topping, thawed
- 1 (20-ounce) can crushed pineapple in juice
- 1 (1.4-ounce) package sugar-free instant vanilla pudding mix
What to Do
- Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray. Pour batter into baking dish.
- Bake 25 to 30 minutes, or until toothpick inserted in center comes out clean. Let cool.
- In a medium bowl, combine whipped topping, pineapple with its juice, and pudding mix; stir until thoroughly combined. Spread evenly over cake.
- Refrigerate 1 hour, or until ready to serve.

First, I bought the pillsbury s.f. brand. I thought thats the only 1. Anyways. I baked for 25 minutes. Checked and my toothpick came out clean. A while later I checked to see if cooled and my cake drooped on part of it. Put my finger on it and it was goopy. Stuck it back in the oven. My cake overall wasn't as moist, and I'm not sure wether it's because I put it back in the oven, or just the cake itself. 2nd, I'm T1 diabetic, so carbs are important, and for a box of pillsbury cake mix there's 1300 carbs. So,how was it only 6.3 carbs? I calculated 46 through my fitness pal.

Hi there! To keep the cake from drooping, try to avoid over-beating the batter. Too much air in the batter can cause it to droop. Also, another tip, is try to avoid opening the door during baking as that can also cause the cake to droop. The nutrition is based on per serving (there are 18 servings in this recipe), not for the whole cake. Hope that helps! :)

I have not made this "Easiest Pineapple Cake" yet and was wondering if I have to add the instant vanilla pudding mix as is from the box, or if I have to prepare it first according to the directions on the pudding box? Thanks.

Hello! You are looking for a 1.4 oz box that is sugar free pudding, not regular pudding. The brand is Jell-o. :) Hope this is helpful.

I made this for a pot luck at my church and they loved it! They all were very surprised to find out that it was sugar free! Easy to make, delicious to eat!
