Tomato Eyeball Bites

Our Tomato Eyeball Bites are so delicious and easy to eat you'll be hard-pressed to stop popping them into your mouth. Veggies have never been so fun - or festive - to eat!
What You'll Need
- 20 cherry tomatoes, halved, with seeds and flesh removed
- 4 ounces reduced-fat cream cheese
- 3 tablespoons reduced-fat ranch salad dressing
- 1/4 teaspoon garlic powder
- 3 tablespoons reduced-fat finely shredded Cheddar cheese
- 1 scallion, sliced into thin rings
- 20 bacon bits
What to Do
- Place tomato halves on a serving platter. In a medium bowl combine cream cheese, ranch dressing, garlic powder and cheese.
- Spoon about 1 teaspoon cheese mixture into each tomato half. Decorate each with a scallion ring in center and place a bacon bit in center of each scallion ring (see photo).
- Cover and refrigerate until ready to serve.
Notes
To remove the seeds and the flesh of the cherry tomatoes, you may want to try a melon baller.
