This hearty Split Pea Soup is the ultimate comfort food and is perfect for a cozy night in with the gang. Don't be surprised if everyone comes back for seconds!
What You'll Need
- 1 (16-ounce) package dried split peas, rinsed and cleaned according to package directions
- 8 cups water
- 2 beef bouillon cubes
- 3/4 cup finely chopped onion
- 1 cup grated carrots (2 to 3 carrots)
- 1/2 teaspoon black pepper
What to Do
- In a soup pot, combine all ingredients; mix well. Bring to a boil over medium-high heat.
- Cover, reduce heat to low, and simmer 1 to 1-1/4 hours, or until the peas are soft, stirring occasionally.
Notes
If you like that traditional smoky ham flavor in your split pea soup, just stir in 1 teaspoon liquid smoke after the soup comes to a boil. You can find liquid smoke in the spice section of the supermarket.
