Creamy Squash Soup

All the healthy benefits of butternut squash are packed in this rich-tasting, yet lighter and healthier Creamy Squash Soup. Even though it's perfect for anytime, this one is also nice for impressing company.
What You'll Need
- 3 cups reduced-sodium vegetable broth
- 3 cups peeled, seeded, butternut squash pieces (about 2-inches each), (about 2 pounds total)
- 1/4 teaspoon dried thyme
- 1/4 cup fat-free half-and-half cream
What to Do
- In large, saucepan over medium high heat, bring vegetable broth to a boil; add squash and thyme. Boil slowly until squash is very soft, about 20 minutes. Cool about 10 minutes.
- Transfer to food processor or blender and process in batches until smooth. Return to saucepan, stir in cream, and heat over medium-low heat until heated through, stirring occasionally to prevent burning.
Notes
Number of servings will vary due to loss of liquid during cooking.
