What You'll Need
- 1 (15-ounce) can apricot halves in juice, sliced, with 2/3 cup juice reserved
- 1 tablespoon cornstarch
- 2 tablespoons white wine vinegar
- 1/4 cup sugar-free apricot preserves
What to Do
- In a small saucepan over medium heat, stir together apricot juice, cornstarch, and vinegar until cornstarch dissolves.
- Bring to a boil, then reduce heat to medium, cooking until sauce thickens, stirring continuously. Stir in preserves and apricots, cooking until preserves dissolve.
