What You'll Need
- 13 whole low-fat graham cracker sheets
- 2 packets (about 1/2 teaspoon) Splenda
- 5 tablespoons light tub margarine, trans-fat-free, melted
- 1/4 cup unsweetened cocoa powder
- 3 tablespoons canola oil
- 1/4 cup sugar
- 1/3 cup strong black coffee, cooled
- 4 ounces fat-free cream cheese, softened
- 8 ounces frozen fat-free whipped topping, thawed
What to Do
- In a food processor, finely crush graham crackers. Place crumbs in a medium bowl and add Splenda and margarine; mix until combined. Press mixture firmly into bottom and up sides of a 9-inch pie plate; set aside.
- In a large bowl, combine cocoa powder and oil. Add sugar and coffee; mix with a spoon until smooth. Add cream cheese and beat with an electric mixer on medium speed until smooth. With a spoon, fold in whipped topping until well blended.
- Pour mixture into pie crust, cover loosely, and freeze at least 4 hours, or until firm.
