What You'll Need
- 3 cups fresh strawberries, hulled and cut in half
- 1 small (0.8-ounce) package sugar-free cook and serve vanilla pudding mix
- 1 large (0.6-ounce) package sugar-free strawberry-flavored gelatin
- 2 cups water
- 1 cup sugar-free frozen whipped topping, thawed
What to Do
- Place strawberries in a 9-inch deep dish pie plate.
- In a medium saucepan, combine pudding mix, gelatin mix, and water. Bring to a boil over medium-high heat, stirring constantly. Pour over strawberries.
- Refrigerate 4 to 6 hours, or until firm. Top with dollops of whipped topping before serving.

Excellent Pie! The problem this year is that there is no more 0.8 oz boxes of the cook serve vanilla pudding. Will it still set up nicely with the 1 oz box?

How do you cut a 3 oz pudding to .08 since I've never found that size. Also no sugar free cook and serve at Walmart.

Hi there! If you aren't able to find it on the shelves make sure to ask your local grocer. If for some reason they stopped carrying it, ask if they can start stocking it again.

I went to the Jello website it only shows the zero chocolate for cook serve. Very disappointed since my husband who is diabetic loved this recipe as well as other members of my family who are not diabetic. I'm not sure how much sugar the regular vanilla cook serve would add to the pie. My husband divided up the box to equal the 0.8 it does set up nicely. Any other suggestions would be appreciated!

I have been looking for this recipe for so long. I had a lady make me a strawberry pie when I was pregnant almost 20 years ago, and I have never found one since. I love that this uses no crust since I am now diabetic. I can finally enjoy this tasty dessert again.

Can I substitute regular cook and serve vanilla pudding mix and strawberry flavored gelatin? If I use other fresh fruit (peaches, etc.) do I use the same 3 cups of fresh fruit?

Hi there! Please keep in mind that altering the ingredients in this recipe will change the provided Nutritional Information and this recipe may no longer be considered diabetic-friendly. The Test Kitchen says that you can definitely substitute regular pudding mix. Additionally if you would like to use a different kind of fruit, you can use the same amount. Enjoy!

This is an awesome recipe. Have made it several times and this last time I added some raspberries. Can't wait until next summer when I can modify this a little and use peaches instead, but of course, with a different gelatin. I think that would be delicious!!

I am disappointed that the Nutritional Value are no longer part of the recipe. By hiding them, when you print the recipe they are not included with the recipe. As a Diabetic they are important to my ability to keep track of the Carbs I am consuming.

Hi there! - We bought the sugar-free, cook and serve vanilla pudding at Wal-Mart, but we have seen it at other grocery stores too. You can find it near the other gelatin/pudding mixes. We suggest calling the store ahead of time, so you don't waste a trip!
