Benihana-Style Dressing

This Benihana-Style Dressing includes all of our favorite Asian flavors, layered with lots of healthy vegetables. The color and crunchiness of this satisfying slaw will have everyone coming back for more!
What You'll Need
- 1/4 cup peanut oil
- 2 tablespoons rice wine vinegar
- 2 tablespoons water
- 1 tablespoon soy sauce
- 1 teaspoon lemon juice
- 1 tablespoon reduced-sugar ketchup
- 1 teaspoon ground ginger
- 1 teaspoon sugar
- 1/4 cup scallions, cut into rings
- 1 cup shredded carrots
- 1 package (10 ounces) fresh spinach, trimmed
- 1 package (8 ounces) fresh sliced mushrooms
What to Do

In a blender or food processor, combine all the ingredients except the spinach, scallions, carrots and mushrooms; blend until smooth.

In a large salad bowl, combine the spinach, mushrooms, and dressing mixture; toss well and serve.
