If you've got fresh fruit in the house, then you've got to whip up this Creamy-Glazed Fruit Salad. This diabetic friendly fruit salad recipe is bursting with fresh flavors and a lightly sweetened yogurt glaze that makes it just perfect.
What You'll Need
- 1 (15-ounce) can mandarin oranges, drained and reserved juice
- 2 tablespoons water
- 2 teaspoons cornstarch
- 2 tablespoons honey
- 1/4 cup non-fat vanilla Greek yogurt
- 1 cup sliced strawberries
- 1 cup chunked cantaloupe
- 1 cup chunked honeydew
- 1/2 cup blueberries
What to Do
- In a small saucepan over medium heat, whisk the reserved juice, water, cornstarch and honey for 3-5 minutes, or until thickened. Pour mixture into a small bowl and let cool. Stir in yogurt.
- In a large bowl, combine remaining ingredients and mandarin oranges. Just before serving, pour mixture over fruit and gently toss until evenly coated. Serve immediately.
