Quick Cilantro-Pesto Fillets

Pesto is one of those sauces that teams with practically anything. Use it to dress up your regular chicken and fish dishes, like Quick Cilantro-Pesto Fillets, and even give new life to ordinary sandwiches!
What You'll Need
- 1 cup packed cilantro leaves
- 3 cloves garlic
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon ground red pepper
- 2 tablespoons olive oil
- 4 (4-ounce) tilapia fillets
What to Do
- Preheat the oven to 400 degrees. Coat a 9 x 13-inch baking dish with cooking spray.*
- In a food processor or blender, process the cilantro, garlic, lemon juice, salt, and ground red pepper until the cilantro is well chopped, scraping down the sides as needed. Slowly add the oil and process until well blended.
- Place the tilapia fillets in the baking dish and spread the cilantro-pesto evenly over it.
- Bake for 10 to 12 minutes, or until the fish flakes easily with a fork.
Notes
*To make this a gluten-free recipe, use nonstick cooking spray with no flour added.
