Fatty fish like salmon that are high in omega -3 fatty acids are so healthy for us. That's why this Homestyle Salmon Loaf is such a good choice for a diabetes lifestyle.
What You'll Need
- 1 cup soft sugar-free, whole-grain bread crumbs
- 1/4 cup finely chopped onion
- 1/3 cup liquid egg whites, or 2 egg whites, beaten
- 2 tablespoons water
- 1 can (15-ounce) salmon, drained, flaked
What to Do
- Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray.
- In a large bowl, mix bread crumbs, onion, egg whites, and water. Let stand about 5 minutes. Stir in salmon and mix thoroughly. Pack salmon mixture lightly into prepared loaf pan.
- Bake 50 to 55 minutes, or until brown. Let stand about 10 minutes before cutting.
