Florentine Fish Roll-Ups sounds fancy, but this recipe is as at home for a weeknight meal as it is super for a company meal. It's got that holiday look - but boy is it ever easy!
What You'll Need
- 1 (10-ounce) package frozen chopped spinach, thawed and well drained
- 2 tablespoons grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 (6-ounce) white-fleshed fish fillets, such as sole, flounder, or tilapia
- Cooking spray
- 1/2 teaspoon paprika
What to Do
- Preheat the oven to 350 degrees. Coat a rimmed baking sheet with cooking spray.
- In a medium bowl, combine the spinach, Parmesan cheese, garlic powder, salt, and pepper; mix well.
- Spread the spinach mixture evenly over the fish fillets. Roll up jellyroll style and place seam side down on the baking sheet.
- Lightly coat the fish with the cooking spray and sprinkle with the paprika. Bake for 18 to 22 minutes, or until the fish flakes easily with a fork.
