Baked Salmon Florentine

The luscious, creamy spinach topping that bakes over these healthy salmon fillets may have you wondering if this one is really diabetes-friendly! Well, wonder no more.…it is! So enjoy the rich taste of our Baked Salmon Florentine without guilt.
What You'll Need
- 1/2 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
- 2 tablespoons onion-chive flavored cream cheese, softened
- 1 (1-pound) package frozen salmon fillets, thawed according to package directions, drained, and patted dry
- 4 teaspoons lemon juice
What to Do
- Preheat oven to 375 degrees F. Tear 4 rectangular pieces of aluminum foil; coat each with cooking spray.
- In a small bowl, mix spinach and cream cheese.
- Place each salmon fillet on foil piece. Spread 1/4 cup spinach mixture over each fillet. Fold and seal foil over fillets.
- Bake 30 minutes or until salmon flakes easily. Sprinkle each fillet with 1 teaspoon lemon juice and serve immediately.
Notes
Be careful when opening foil packets - they'll be very hot!
