Mediterranean Chicken

My schedule keeps me on the road so much that when I get to stay home and cook a nice dinner for my family, this is the one I choose most often. The bit of wine that's in it makes it seem so elegant!
What You'll Need
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
- 1 teaspoon dried basil
- 1 garlic clove, minced
- 1/2 a small onion, diced
- 1/2 a small green bell pepper, diced
- 1/2 a small red bell pepper, diced
- 1/3 cup dry white wine
- 1 can (14.5 ounces) diced tomatoes
- 1/4 cup sliced pimiento-stuffed green olives
- 1/4 teaspoon black pepper
What to Do
- In a large skillet, heat the oil over medium heat. Add the chicken and basil to the skillet and brown the chicken, stirring frequently.
- Add the remaining ingredients and cook, uncovered, for 20 minutes, or until the vegetables are tender, no pink remains in the chicken, and the juices run clear.

This would be a good opportunity to use a cast iron skillet! cast iron makes great stove top chicken because it cooks slow enough to make sure the chicken is cooked thoroughly without burning when you want to fry it.
