In-a-Hurry Curried Chicken

Did you know that curry powder has been long associated with Indian cooking, and is actually made up of around twenty different herbs, spices, and seeds? That makes it a pretty complicated flavoring...but one that we can recreate with our In-a-Hurry Curried Chicken.
What You'll Need
- 1 teaspoon canola oil
- 1 tablespoon chopped fresh parsley
- 1 1/2 teaspoon curry powder*
- 1 teaspoon onion powder*
- 1 teaspoon ground cumin*
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 4 (8-ounce) bone-in chicken breast halves, skin removed
What to Do
- Preheat the oven to 350 degrees. Coat a rimmed baking sheet with cooking spray.*
- In a small bowl, combine the oil, parsley, curry powder, onion powder, cumin, and pepper; mix well. Rub the chicken pieces with the seasoning mixture then sprinkle with salt and place on the baking sheet.
- Bake for 20 to 25 minutes, or until no pink remains in the chicken. Serve immediately.
Notes
*To make this a gluten-free recipe, use seasonings with no added starch from a gluten-containing source, and nonstick cooking spray with no flour added.
