It's time to "go bananas!" 'cause our Monkey Mug Cake is a banana cake that you can eat all by yourself! This diabetic dessert recipe is perfectly portioned just for you, and takes just minutes to enjoy, so there's no extra monkeyin' around in the kitchen.
What You'll Need
- 3 tablespoons flour
- 1/8 teaspoon baking powder
- 1/2 teaspoon sugar substitute
- 2 tablespoons mashed ripe banana
- 2 tablespoons liquid egg substitute
- 1/4 teaspoon vanilla extract
- 1 tablespoon + 2 teaspoons water
- TOPPING
- 1 tablespoon chopped walnuts
- 1 teaspoon brown sugar
- 1/8 teaspoon ground cinnamon
- 1 teaspoon soft margarine
What to Do
- Coat a 10-ounce microwaveable mug with cooking spray.
- In a small bowl, combine flour, baking powder, and sugar substitute. Add banana, egg substitute, vanilla, and water; mix until smooth. Spoon into mug.
- In a small bowl, mix remaining ingredients and sprinkle on top of batter.
- Microwave 60-65 seconds, or until set in center. Let cool 3-5 minutes, then enjoy.

I have a question. If I do not have egg substitute can I use eggs and how much?

Hi there! You can use an egg in place of egg substitute, but the recipe would have to be doubled; 1 egg equals cup substitute, and this recipe calls for 2 Tbl . So it can make 2 mugs. Hope this was helpful!
