Grilled Flank Steak

Think you can only enjoy the taste of your grilled specialties in the summer or when the weather is warm? Not so, thanks to the availability of grill pans and ridged skillets. We can savor tasty delights like Grilled Flank Steak all year 'round.
What You'll Need
- 1/2 cup olive oil
- 3 tablespoons red wine vinegar
- 1 scallion (green onion), thinly sliced
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 1 (½ - to 2-pound) beef flank steak, about 1 inch thick
What to Do
- In a large resealable plastic storage bag, combine all ingredients except the steak; mix well.
- Score steak on both sides by making diagonal cuts 1-1/2 inches apart. Place steak in storage bag, seal, and marinate in refrigerator for at least 4 hours, or overnight, turning bag over occasionally.
- Heat a large grill pan over high heat until hot. Remove steak from marinade and place in pan; discard any remaining marinade. Cook 4 to 5 minutes per side for medium-rare, or until desired doneness beyond that.
- Thinly slice steak across the grain, and serve.
Note
Serve the steak as is or topped with a fresh tomato salsa or caramelized red onions.
