What You'll Need
- 1 (14-3/4-ounce) can pink salmon, drained, bones removed, and flaked
- 1 egg
- 2 tablespoons yellow mustard
- 2 teaspoons fresh parsley, chopped
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 3/4 cup herb-seasoned stuffing mix
- 1/2 cup all-purpose flour
- 1/4 cup vegetable oil
What to Do

In a large bowl, combine the salmon, egg, mustard, parsley, onion powder, and pepper; mix well. Stir in the stuffing mix, and form into 14 small patties.

Place the flour in a shallow dish. Add the salmon patties, turning to coat completely.

Heat the oil in a large skillet over medium-high heat. Add the patties and cook in batches for 2 to 3 minutes per side, or until golden. Serve immediately.
