Nutty White Bean Hummus

A sprinkling of pine nuts over our homemade Nutty White Bean Hummus adds a light crunch and extra flavor to every mouthful. We've switched garbanzo bean out for the cannellini beans, for a bit of novelty.
What You'll Need
- 2 tablespoons pine nuts
- 1 cup canned cannellini beans, drained, with liquid reserved
- 1 teaspoon grated lemon zest
- 1/4 teaspoon garlic powder
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
What to Do

In a skillet over low heat, toast pine nuts until light brown and fragrant.

In a medium bowl, mash cannellini beans.

Add lemon zest and lemon juice to beans, mixing well. Add garlic powder and salt, and mix thoroughly. Stir in small amounts of reserved bean liquid until desired consistency. Sprinkle with pine nuts and serve.
