We made a classic salad a trendy new favorite by stuffing it into baked wonton cups. Our Caesar Salad Cups make great party appetizers or healthy, low-carb snacks. Enjoy one anytime you want 'cause they're super easy to make!
What You'll Need
- 6 wonton wrappers
- 1 cup shredded romaine lettuce
- 1/4 cup shredded carrots
- 1 cup refrigerated, diced, cooked chicken
- 2 teaspoons bacon bits
- 2 tablespoons light Caesar dressing
- 1 tablespoon shredded Parmesan cheese
What to Do
- Preheat oven to 350 degrees F. Coat a 6 cup muffin tin with cooking spray.
- Place a wonton wrapper into each muffin cup and lightly spray wontons. Bake for 8 to 12 minutes, or until light golden, let cool.
- When ready to serve, in a medium bowl combine remaining ingredients except Parmesan cheese, toss gently. Divide salad mixture evenly into wonton cups, sprinkle with cheese. Serve immediately.

I think these Caesar Salad Cups are a wonderful idea and something tasty and healthy. I am always looking for tasty diabetic recipes because for the most part diabetic recipes can be pretty bland. We keep won ton wrappers in the freezer to make shredded pork wontons when we make homemade Chinese meals, so this can be another use for those!

Wondering of this can be assembled/made 1-2 hours in advance? or will they get too soggy? I was thinking of doing these for a Party.

Hi there! Yes, you can make these ahead of time. You can make the cups and the chicken mixture (minus the salad dressing) beforehand. Before serving, add the salad dressing to the chicken mixture and distribute into cups. Enjoy!

I think this would be a unique twist on a salad for a potluck. I bet they'd go quick! You could prep all the parts and assemble them at the last minute and they'd still be crispy. People would be asking who made these? they're great!
