Between the crunch and the explosion of flavor, these Garlic Parmesan Zucchini Fries are a must have. So the next time you need a zucchini fix, whip up a batch of these for a taste that is absolutely addictive.
What You'll Need
- 2 large zucchini
- 1 tablespoon canola oil
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
What to Do
- Preheat oven to 450 degrees. Coat a rimmed baking sheet with cooking spray.
- Cut each zucchini in half crosswise, then cut each half lengthwise into 3 wedges.
- In a medium bowl, combine oil, lemon juice, garlic powder, salt, and pepper; mix well. Add zucchini and toss until evenly coated. Add Parmesan cheese and toss until evenly coated. Place zucchini in a single layer on baking sheet.
- Bake 15 to 20 minutes or until tender and crispy. Serve immediately.
