Fancy up your spread by adding these sophisticated, yet totally easy, Cheesy Brussels Sprouts to your side dish lineup. We use goat cheese to make these Brussels sprouts extra-special, and bacon to add a little punch of flavor. In short, this Brussels sprouts recipe is unforgettable.

What You'll Need

  • 3 slices turkey bacon
  • 2 teaspoons canola oil
  • 1 pound Brussels sprouts, trimmed and cut in half
  • 2 cloves garlic, minced
  • 1/4 cup water
  • 3 ounces soft goat cheese
  • 2 tablespoons fat-free milk
  • 1 tablespoon grated Parmesan cheese
  • 1/4 teaspoon salt (optional)
  • 1/4 teaspoon black pepper
  • Paprika for sprinkling

What to Do

  1. Coat a large skillet with cooking spray. Over medium-high heat, cook turkey bacon 5 to 7 minutes, or until crispy. Remove from skillet, let cool, and dice; set aside.
  2. In the same skillet over medium heat, heat oil; saute brussels sprouts and garlic 5 minutes, or until lightly browned. Add water, cover, and continue cooking 5 minutes, or until brussels sprouts are fork-tender.
  3. Meanwhile, in a small saucepan over low heat, combine goat cheese, milk, Parmesan cheese, salt, if desired, and pepper. Heat until cheese is melted and mixture is hot. Pour sauce over brussels sprouts, stir in bacon, and heat 1 to 2 minutes, or until hot. Sprinkle with paprika before serving.

Oh my, this sounds good. The only way I have ever had brussels sprouts is to just boil them in water and season them with pepper and a little bit of butter. I have never tried goat cheese before. I think I would just use some mozzarella. I will give it a try.

Add some sweet onion and chopped bacon to this . YUMMY!! Oh It's soooooo goooood!!!
