What You'll Need
- 1 1/2 cup all-purpose flour
- 2 teaspoons baking powder
- 1 1/2 teaspoon chili powder
- 1 teaspoon onion powder
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 (15-ounce) can pure pumpkin
- 2 eggs
- 1/2 cup reduced fat milk
- 2 tablespoons margarine, melted
What to Do
- Preheat oven to 350 degrees F. Coat rimmed baking sheets with cooking spray.
- In a large bowl, whisk flour, baking powder, chili powder, onion powder, cayenne pepper, and salt.
- In a medium bowl, whisk pumpkin, eggs, milk, and margarine. Add to dry mixture and stir just until combined. Drop batter by tablespoonfuls onto baking sheet.
- Bake 15 minutes, or until golden brown on bottom. Serve warm.
