Tex-Mex Meat Loaf

This may not be your "mom's meat loaf" but our Tex-Mex Meat Loaf is sure a super option for anyone who has diabetes. Our Test Kitchen chose lots of lighter healthier ingredients and zesty Mexican flavors that add huge taste to this classic comfort food.
What You'll Need
- 1 (14-ounce) can stewed tomatoes with Mexican flavors (jalapeno, garlic, and cumin)
- 1 package (1-pound) ground turkey breast
- 1/2 cup liquid egg substitute
- 1 cup old-fashioned oats
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon onion powder
What to Do

Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray. In a food processor or blender, process tomatoes 5 to 10 seconds. Reserve 1/4 cup, set aside.

In a large bowl, combine all ingredients. Pack mixture in prepared loaf pan. Spoon reserved tomato sauce on top of meat loaf.
- Bake 1-1/2 hours. Drain fat from loaf pan 1 to 2 times during cooking.

My husband does not red foods and in particular tomatoes. I have had some success with tomato sauce. Can I prepare this Meat Loaf using tomato sauce with garlic and cumin stirred in? Are there any other spices I should use?
