Light 'n' Hearty Pasta Sauce

A homemade pasta sauce that fits a diabetes diet can be challenging, but our Mr. Food Test Kitchen team came up with a winner with this Light 'n' Hearty Pasta Sauce. You're gonna love it!
What You'll Need
- 2 cloves garlic, minced
- 1 cup sliced mushrooms
- 1 pound ground turkey breast
- 3 cups reduced sodium marinara sauce
What to Do
- Coat a large nonstick skillet with cooking spray. Over medium heat, cook garlic and mushrooms until tender, stirring occasionally. Remove from pan. Add turkey and cook until no longer pink, stirring occasionally.
- Add garlic-mushroom mixture and marinara sauce to skillet and bring to a boil. Reduce heat to low and simmer about 10 minutes, or until heated through.
Notes
To make your own marinara sauce, in a sprayed large pan over medium heat, cook 1 thawed (12-ounce) package frozen chopped onions, celery, peppers, and parsley blend and 2 minced garlic cloves, until tender. Add 2-1/2 cups no-salt tomato sauce and 2 teaspoons crushed Italian herb seasoning and bring to a boil. Reduce heat and simmer, covered, 10 to 15 minutes. Makes 3 cups.
